Kodo Millet is grown in a higher altitude and is commonly a part of the Himalayan diet. It adds warmth and is ideal for consumption in the winter months. Kodo flakes is a versatile ingredient. When cooked it is soft and fluffy with a delicate flavour. It can be made into a flakes upma in both sweet and savory forms. Simply steamed and mixed with coconut and jaggery makes a healthy breakfast or light dinner dish. Temper it with curry leaves, lime/coconut, chillies and onions for a savoury version.
Kodo contains high amounts of Vitamin B3, B6, folic acid and phytochemicals containing sulphur. It is a good source of essential amino acids like lysine, threonine, isoleucine and valine. These are constituent of most proteins and essential in building and repair of muscle. Since the body does not produce some of these amino acids it is essential to include it as a part of the diet. Like other millets, kodo is a rich source of fiber thus promoting gut, health, lowering blood sugar and cholesterol.
