Coconut Palm Jaggery is made from the coconut flower sap. The unfermented coconut sap is collected and boiled. The semisolid jaggery solidifies gradually by the cooling effect of the atmosphere into a crystallized hard substance given different shapes by pouring the mixture in the hollow bamboo moulds or granulated.

Benefits:

Retains some of the minerals present in the sap, including iron, zinc, potassium, and small amounts of antioxidants. It has lower glycaemic index (GI) compared to refined sugar. Contains antioxidants that helps protect the body against oxidative stress and may have various health benefits. It also contains inulin, a prebiotic fibre that reduces sugar highs and keeps the gut happy.
